Crock Pot Apple Butter

Apple Butter Gifts

6 lbs. apples
3 cups apple cider
6 cups sugar (I used 5 cups white, 1 brown)
3 tsp. cinnamon
1 1/2 tsp. ground cloves

3/4 tsp. ground allspice

Core, peel, and dice apples and put in crock-pot. Combine all remaining ingredients and pour over apples. Turn crock-pot on low and cook for 24 hours, stir frequently after apples have cooked down. I use a whisk to improve consistency. If the apple butter is not thick enough, remove lid and cook on high the last 4 hours.  Put the apple butter into sterilized jars and process them in a hot water bath to seal. I don’t have a canner and use my pasta pot to process. I prefer the 8 oz. jars found at Target that are short and more elegant than the traditional jars. I give these as gifts for many of my friends and family during the holidays, so I add a bit of fluff, ribbon, or raffia to each jar and place them in a basket beside my hearth. Not only are they add a decorative element, they are convenient when someone stops in or I’m running out.
